"Northriver" Cervelas Salad |

- 1 cervelas sausage, peeled of its casing and cut lengthwise, then sliced across thinly
- 2 green onions, sliced thinly
- 1 piece of emmental cheese, approx. 3"x3"x1", cut into thin slices and the slices cut into small pieces of 3/4"
- 1 piece of gruyere cheese (*), approx. 3"x3"x1", cut into thin slices and the slices cut into
- small pieces of 3/4"
- 1 fresh tomato, cut into 1/2" cubes
- chopped fresh parsley to taste
D ress ing:
- 5 tbsp. olive oil
- 1 -1/2 tbsp. red wine vinegar or "Kressi" herb vinegar
- 1 tsp. dijon mustard
- 1 tbsp. mayonnaise
- salt & pepper

Whisk dressing ingredients together in a medium-large bowl. Add the sausage, onions, cheese and tomato pieces. Toss thoroughly to coat. Sprinkle with chopped parsley. Let stand for 15 minutes at room temperature. Serves 2.
Multiply in equal proportions to serve more people. Great with fresh country loaf on the side at an outdoor picnic.
* Appenzell or Tilsit cheese can be substituted to the gruyere cheese if desired.
