In a heavy skillet, heat olive oil over medium-high heat. Lower heat to medium, add onion and stir fry until transparent (about 15 minutes). Add chili. Continue cooking until chili is hot and soft. Add dry spices and stir, dry frying until well mixed and fragrances come through.
Add coconut milk and stir, over high heat, until reduced to half. Add chicken pieces and vegetables. Lower heat to simmer, stirring constantly. Add yogurt and stir through. Serve with steamed rice. Gives 2 portions.. |
